Chocolate manufacturing requires precise control of ingredients, processes and technology to ensure consistent quality. This is especially critical for ice cream coatings, where texture, flavour and processing performance must be perfectly balanced.

Consumers expect a chocolate coating that forms a thin, crisp shell, remains stable at freezing temperatures and delivers a clean, satisfying snap with every bite. Meeting these expectations requires a carefully engineered formulation that enables the coating to:

To achieve these properties, manufacturers precisely balance the proportions of cocoa liquor, cocoa butter and vegetable fats, tailoring each formulation to the specific requirements of ice cream applications. ECO²-CHOC: Efficient Chocolate Processing Technology
LIPP’s ECO²-CHOC process combines efficient chocolate processing with consistent product quality. Conching begins in the powder phase, allowing early removal of moisture and volatile substances and reducing conching energy requirements by up to 50%, depending on recipe and process conditions. In the TRIQUENCE® mixer, raw materials are intensively mixed and pre-conched before passing through a buffer mixer to the IMPACTOR® agitator bead mill. With residual moisture of ≤ 1%, the process supports low viscosity, reduced fat levels and efficient grinding to the required fineness.

High Shear Conche: Efficient Conching and Easy Maintenance
At the heart of the ECO²-CHOC process is LIPP’s High Shear Conche, combining VORTEX CHAMBER® shear heads with the proven TRIQUENCE® mixing mechanism. The system constantly creating new surfaces in the product to improve the removal of moisture as well as unwanted volatiles and get a highly efficient heat transfer throughout the conching process. For effective degassing and moisture removal, compressed air can be introduced directly above the shear heads, while exhaust air is discharged through the open top nozzle of the conche. The single-sided bearing arrangement and large front access doors ensure easy access for inspection and cleaning, reducing downtime while supporting high hygiene standards.

Fine Grinding for Temperature-Sensitive Chocolate Masses
Following conching, achieving the required particle size and particle size distribution is critical for delivering the smooth mouthfeel expected from premium chocolate products. LIPP's agitator bead mill IMPACTOR® has been designed for low, medium- to high-viscosity and temperature-sensitive chocolate masses. The system consistently achieves particle sizes of ≤ 30 μm with a narrow and highly uniform particle size distribution. This precise grinding performance helps manufacturers produce chocolate coatings with outstanding texture, smoothness and sensory quality while maintaining process efficiency.
