Rework machines
Lipp Shear Stream Mixers allow much more efficient processing of chocolate misshapes, hollow chocolates, filled pralines, chocolate bars with nuts, biscuit and wafer components.
Two types of procedures:
For moist rework – i.e. containing alcohol and water (in particular pralines and caramel components) – a Shear Stream® Vacuum Mixing Plant is used in batch operation. Separately driven rotor/stator shear heads with counter flow induction (patented) perform the disintegration (e.g. of nuts, almonds, wafers, etc.), fine dispersing and homogenisation of the rework mass. To drive off the liquid as well as for drying to below 1% moisture, a vacuum is applied, the product is heated and the moist components are recovered through condensation.
The continuously operating REFLECTOR® (pat.) Rotor/Stator Shear Force Mixer is designed especially for disintegrating and mixing rework and processing it into a homogenous paste in a matter of seconds. Usually no additional post-treatment is needed.
This mass can also be processed, batchwise, in a Shear Stream Mixer. This may have a cantilevered main shaft and a front door which can be completely opened for inspection and cleaning of the machine.
This efficient and powerful multifunctional mixer can also be used for other tasks in the production of chocolate and confectionary goods – for example as a pre-mixer for chocolate mass prior to refining, for conching of cocoa mass and the disintegration and pasting of nuts or almonds.
Cocoa mass, chocolate or cocoa butter may be added to improve the viscosity of rework mass.
The rework machines are available in sizes which are designed to suit your specific need requirements, including large throughput applications. Complete electrical switch gear as well as vacuum and heating/cooling systems specially designed for the process can also be supplied.
