3 clear-cut arguments in favour of the Lipp-TRIQUENCE®-Conche
Faster flavour development and improved rheological characteristics with clearly shorter conching times through
- effective forced ventilation of the conche and
- high input of shear force into the bulk mass
System advantages of the TRIQUENCE®-Conche:
Forced ventilation and therefore continuous air exchange (the air volume of the conche is exchanged approx. 150 times per hour) results in effective removal of unwanted volatile particles from the bulk mass. The TRIQUENCE®-Mixing System guarantees optimum heat removal while generating high shear force. This leads to
- faster flavour development
- higher fat release
- faster removal of humidity
The excellent mixing effect prevents concentration and temperature gradients. Hence, gentle drying without partial overheating. High specific product surface through mechanically generated fluidised bed reduces conching time. Only 1 mixing shaft with small clearance of the mixing blades to the drum wall results in complete discharge of the Conche. Only 2 shaft sealings reduce the maintenance effort considerably.
Homogenizing and disintegrating in one step
with the Lipp TRIQUENCE®-Shear Stream Mixer
Ideal for the following applications:
- Production of nut / almond pastes for filling masses
- Rework homogenization with nut, wafer and biscuit portions
- Pasting incl. sugar disintegration down to approximately 200 µm
These 3 applications can also be combined in a process chain. Typical process times for example for the homogenisation of wafer rework and subsequent pasting with milk powder, cocoa mass and granulated sugar (incl. sugar disintegration) are at about 10 minutes (not including filling and discharge times).
This gives you a mixing system which offers maximum flexibility and effectiveness in particular if frequent product or recipe changes are required. It is possible to design the TRIQUENCE®-Shear Stream Mixers with built-in rotor / stator – shear heads and in cantilever design with a hinged front wall serving as cleaning door. This enables even more improved cleaning of the mixing drum.
Function:
The mass is conveyed into the area of the shear heads by the main mixing mechanism. The shear heads suck in the mass from top and bottom and move it through the shearing zone before it is thrown back into the bulk mass through the grinding apertures. The rotor / stator – shear heads in combination with the TRIQUENCE® - Mixing System ensure a significant reduction of the mixing time with simultaneous disintegration effect.
The Inline Mixer Reflector® is also ideally suited for Rework processing as well as Disintegration and Deagglomeration processes
This continuously operating shear force mixer combines the system advantages of the TRIQUENCE®-Intensive Mixer with compact design and easy integration into existing installations.
A further advantage:
Rework processing with the REFLECTOR® often does not require the addition of fat or emulsifier as the necessary melting energy to liquefy the mass while simultaneously reducing viscosity is generated in the REFLECTOR® through high introduction of shear force. Therefore, elaborate dosing is not necessary.
The REFLECTOR® is also ideally suited for
- pasting of raw masses
- wetting of powders with liquids without the risk of agglomeration.
